Ingredients
Mutton- 500 gms
Ginger Garlic Paste- 2 tsp
Curd- 1 cup
Red chilli powder- 1 tsp
Coriander powder- 1 tsp
Cumin Powder- 1 tsp
Turmeric Powder- 1/4 tsp
Onion- 3 sliced
Cinnamon-2
Cardamom-3 pods
Bay leaf- 1
Cloves-2
Ginger Garlic Paste- 1 tsp
Ghee-1 cup
Kashmiri Red chilli powder- 2 tsp
For Marination:
1. Marinate the mutton with Ginger garlic paste,curd, coriander powder,cumin powder,red chilli powder.
2. Refrigerate for 1 hour.
For Laal Maas Gravy:
1. Heat a pan and add ghee , allow it to boil.
2. Add cloves,cinnamon, bay leaf, ginger garlic paste, onion.
3. Saute for 10 - 15 mins till onion is golden brown.
4. Now add the marinated mutton, add Kashmiri red chilli powder and mix well.
5. Add 1 glass of water and close the pressure pan and leave it for 8 or 9 whistles.
6. Burn the coal on stove top.
7. Once heated, transfer it to the pressure pan.
8. Pour ghee over the coal, smoke will be released.
9. Close the lid and leave it for 10 minutes.
10. Open the lid after 10 minutes.
"Authentic Rajasthani Laal Mass" can be served with a smoky flavour.
