Palak Pulao/Spinach Pulao

Spinach pulao is a healthy , gluten -free and vegan receipe which is easy and kids friendly receipe.

Spinach as most kids are against green leafy veggies, you can try this and make your kids and family enjoy the tasty pulao as the presence is hidden.

Mixed vegetables like beans,carrot , peas, potato goes very well with this pulao.


Ingredients:

Basmati Rice- 1 Cup( Rinse & Soak for 30 mins)

Water- 1.5 to 2 cups


For Tempering:

Cocunut Oil/Ghee- 2 to 3 tsp

Indian bay leaf- 1, 

Cloves-2,

Cinnamon- ½ inch ,

Cardamoms- 2, 

Star anise-1

Cumin seeds/cumin powder- 1 tsp

Onions- 2

Mint leaves- few

Vegetables of your choice(Beans, carrot , peas, potato,etc)

Chilli powder-1/4 tsp

Garam masala- 1/2 tsp

Turmeric powder- 1/4 tsp

salt to taste


For Grinding:

Green chilies- 2 to 3,

Ginger - ½ inch

Garlic cloves- 3 to 4

Spinach- 2 cups(Roughly Chopped)


Steps to Prepare:

1. Rinse 1 cup basmati rice ,then soak the rice  in enough water for 30 minutes. Later drain and keep aside.

2. Meanwhile, rinse the spinach leaves and chop them roughly.

3. Now blend the grinding ingredients into a fine paste.


4. In a pressure cooker, heat 2 tbsp oil and add the tempering ingredients , start adding with patta, cardamom, star anise , bayleaf, cumin seeds/powder and onions and saute for 5 mins .

5. Saute till the onions turn golden brown , now add the veggies (optional). Fry for 3-4 minutes.

6. Now add the spinach puree and fry until raw smell goes off.

7. Once the raw smell leaves off from the spinach puree, add chilli powder, garam masala, turmeric powder and fry for 5 mins.

6. Now add the Basmati rice and saute for 2 -3 seconds.

7. Now add salt and required water for the rice .(Optional: Add Lemon juice if required)

8. Cover and pressure cook for 2-3 whistles


Serve spinach pulao with cucumber raita , potato fry or salad of your choice.
